While the idea of eating healthier is appealing, the reality often presents significant challenges. Rising grocery prices make it difficult to afford fresh and nutritious foods, especially for those juggling multiple jobs just to make ends meet in less-than-ideal living situations. The cost of a single crown of broccoli can be nearly $4, and finding both the mental capacity and physical energy to cook balanced meals isn’t always feasible.
Many of us can relate to growing up on kid-friendly freezer meals—combinations of a single vegetable, mashed potatoes, and mystery meat—because our parents had full-time jobs. While we can’t blame our parents, such culinary experiences may not have set us up for success. Additionally, individual preferences like disliking the sound of apple crunching can further complicate our dietary choices.
